Soya Egg Curry
Thought: Every bengali's alternate menu if not chicken on a lazy Sunday is 'Dimer Jhol' popularly known as Egg Curry. I thought of recreating this simple yet tasty dish incorporating more vegetarian proteins in it.
Serves: 4 adults
Ingredients:
- 4-6 boiled eggs
- 10-12 boiled soya chunks paste
- 1 big onion finely chopped
- 1 big tomato paste
- 4-5 tsp ginger-garlic paste
- chilli powder as per taste
- salt, sugar as per taste
- 2-3 tsp oil preferably mustard oil
- some finely chopped coriander leaves
- turmeric powder
- cumin-coriander roasted powder
- garam masala (optional)
- boiled potatoes (optional) - I haven't used here
Method:
- Make small cut marks on the eggs. Take a pan, add 1 tsp oil and fry the eggs till they are light brown. Add a pinch of salt, chilli powder and turmeric powder while frying.
- Take 2-3 tsp of oil. Add the chopped onions. Fry till they turn golden brown. Add 2-3 tsp of chilli powder (this enhances the colour of the dish). Then, add the tomato paste and some salt-sugar.
- As soon as the paste starts leaving oil, add the soya paste along with ginger-garlic paste. Add drizzles of water if the paste starts burning or sticks to the bottom.
- After the paste cooks, add cumin-coriander roasted powder, garam masala and the coriander leaves. (If you making with potatoes, add the potatoes now). Sir for about 40-60 secs, then add the fried boiled eggs. Add water as per your gravy consistency requirement.
- Serve hot with rice or bread of your choice.
