Jalebi a.k.a Jilipi

Thought: This is another iconic sweet dish for Bengali people with sweet tooth during any fair/mela. I tried many different recipes, but this one is my very own recreation version of the 'Jilipili' (term by most Bengali toddlers). Recipe is an inspiration from Banglarrannaghor.


Piping bottle: Since this dish requires a piping bottle, so people without one can use my method to make one by yourself. Just take an empty medium sized pet bottle (e.g., like Amul Kool or Mother Dairy Lassi ). Clean the bottles nicely and make a small hole on the cap using a screwdriver. And your piping bottle is ready.


Ingredients:
  • 1 cup maida or all purpose flour
  • 3/4 cup water (for jalebi mix)
  • 1/4 cup curd 
  • 1/3 tsp baking soda
  • 2 cups sugar
  • 1 cup water (for sugar syrup)
  • 1/2 tsp cardamon powder
  • White oil
  • A small slice of lemon

Method:

For jalebi mix: Take 1 cup maida, 3/4 cup water, 1/4 cup curd and 1/3 tsp baking soda and mix everything nicely and keep it aside for 10 mins.

For sugar syrup: Take 2 cups of sugar, 1 cup of water, 1/2 tsp of cardamon powder and a small slice of lemon and boil everything until the sugar dissolves.

Main process: Fill the jalebi mix in the piping bottle. Take a flat pan and put enough oil that it covers 1/3 area of the pan. When the oil is medium hot, pipe the jalebi mix into the pan making the iconic jalebi shapes. As soon as the jalebi turn golden brown, take it out and dip it in the sugar syrup for 5 mins. Repeat for other jalebis and keep eating. (haha)
