Gulab Jamun

Thought: Since Raksha Bandhan is fast approaching, I thought of making these yummy Gulab jamuns in my way instead of buying the canned ones in this pandemic situation. 


Guys who are very lazy can use the ready made Gulab jamun mix. Add some milk and ghee to make the soft batter-dough mixture. Rest follow the same process for frying and sugar syrup.


Ingredients:
  • 3 tsp of sooji or semolina
  • 1.2 cups of powdered milk
  • 2 tsp of ghee: melt it 
  • 1/3 cup of milk
  • 2 tsp of maida or all purpose flour
  • 1/2 tsp of baking powder
  • White oil for frying
  • 2 cups of sugar (for syrup)
  • 2 cups of water (for syrup)
  • 1/2 tsp of cardamon powder 
  • 1/3 tsp of rose water (optional)
  • A thin slice of lemon

Method:
  • Mix all the batter ingredients nicely and keep it aside for 10 minutes. Add milk or milk powder depending on the consistency of the batter i.e., too hard or too runny respectively. 
  • Heat white oil in pan (fill enough oil so that your balls dip completely while you begin to fry) and keep it on medium flame.
  • Make small balls from the soft batter-dough mixture and fry them till they turn a bit more than medium brown coloured.
  • Take 2 cups of sugar and 2 cups of water along with 1/2 tsp of cardamon powder in a pan and boil till the sugar dissolves. Add a thin slice of lemon to the sugar syrup (This helps the sugar syrup to crystallise back).
  • Dip the balls into medium hot sugar syrup and keep it aside for an hour.
  • Serve it hot or cold as per your choice.
