Chicken Nihari

Thought: How about making Niharis in just 35-40 mins? Yes, this is my special recipe for making the traditional niharis in the shortest time. I have used chicken here. You can use any meat of your choice.
Traditional Mutton Nihari takes around 4-5 hours to cook. This recipe is an easy process which you can make quickly when guests suddenly turn up.
Ingredients:
- 750 gms of Chicken
- 2 potatoes cut into cubes (optional)
- 3 medium onions chopped
- 4-5 tsp of ginger-garlic (1:3 ratio)
- 2-3 tsp of chilli powder
- Whole Garam masala
- 2 tsp of chicken masala
- 1 tsp of garam masala powder / nihari masala
- Some chopped coriander leaves
- 2-3 tsp of ghee
- 2-3 whole dried red chilli and bay leaves
- 2 tsp of turmeric powder
- 2-3 tsp of roasted cumin-coriander masala
- 1/3 cup of saffron soaked milk (optional)
- 2 tsp of mustard oil
- Salt and sugar as per taste
Method:
- Take a cooker add some water, chicken pieces, potatoes (optional), some salt, whole dried red chillies and bay leaves and a tsp of chicken masala. Cook it for 2 whistles.
- Take a pan. Add 2 tsp of oil, fry half of the chopped onions and take it out after they start crystallising in a separate plate. Add the rest of the onions, some red chilli powder, some salt and some sugar.
- After they turn brownish red, add the ginger-garlic paste, chicken masala, nihari masala, roasted cumin-coriander and keep adding drizzles of water so that the mixture doesn't burn.
- Add the saffron milk, potatoes and the chicken pieces.
- Add chicken stalk as per gravy consistency requirement. Add the chopped coriander leaves.
- Add some ghee, fried onions and serve hot with rice or bread of your choice.
